An exciting opportunity has become available for an experienced Chef de Cuisine to lead the kitchen of an award-winning restaurant within a prestigious 5-star luxury hotel on the Gold Coast.
This is a rare chance to showcase your passion for authentic Cantonese cuisine in a refined fine dining environment while enjoying an outstanding work-life balance with evening service only, Thursday through Monday.
THE ROLE
Leading a talented team of five, you will oversee all aspects of kitchen operations, ensuring exceptional food quality, consistency, and service standards in a fast-paced, high-end dining environment.
KEY RESPONSIBILITIES
- Lead, mentor, and develop a team of culinary professionals
- Deliver exceptional Cantonese cuisine to luxury hospitality standards
- Manage daily kitchen operations, rostering, and workflow
- Maintain the highest standards of food quality, presentation, and consistency
- Ensure compliance with food safety, HACCP, and hygiene regulations
- Manage stock control, ordering, and cost management
- Work collaboratively with hotel leadership to deliver an outstanding guest experience
ABOUT YOU
You are a passionate and hands-on culinary leader who thrives in premium dining environments.
You'll bring:
- Previous experience as a Chef de Cuisine or in a similar senior leadership role
- Strong knowledge and experience in Cantonese or Asian cuisine
- Experience within a luxury hotel or fine dining restaurant
- Commercial Cookery qualifications
- Advanced knowledge of Food Safety Management and HACCP
- Strong leadership, communication, and organisational skills
- Flexibility to work a rotating roster, including evenings
