James is a highly acclaimed Director of Culinary, Author, Brand Ambassador and Founder of Off Grid. His passion for cooking started at the young age of 14, honing his craft in Michelin kitchens, before opening his own award-winning restaurant Biota Dining.
Given Hyatt’s reputation for excellence, development programs, staff benefits and global career opportunities, we introduced James to the iconic Park Hyatt Sydney in 2022 and it was a perfect match. Having achieved a coveted hat from the Good Food Guide, James continues to support the award-winning team at Park Hyatt in a consultant role.
